Braised Tomato & Burrata Chicken with Roasted Asparagus

This recipe will make you look at burrata a different way. I love a good burrata appetizer but having it melted over this tangy and slightly sweet chicken dish is the Italian version of sublime.

Why This Recipe Works for Blood Sugar Balance

It's okay to have bread and pasta. We just need to balance it with enough veggies and protein. This recipe has a great combination of protein from the chicken and burrata, fat from the meat, oils and burrata, and fiber from the tomatoes and asparagus. You can serve it with a crunchy Italian-style bread or over pasta if you want, but this meal is enough on it’s own.

Why This Recipe Works in Your Kitchen

The mixture of chicken and burrata provide a great basis for fat and protein. The honey and balsamic give just a tinge of sweet and sour. The crunch of nuts and a toasted bread allows for a good "chew factor" which makes it a pleasurable experience to eat.
