I had to share this recipe because it is so perfect for making the creamiest caesar dressing without using any dairy.

This is a great summer recipe, wins awards for tons of flavor while being simple. To make your life even easier, make the dressing up to 2 days in advance and keep in the fridge until use.

Caesar dressings have a characteristic "tang" to them and a creamyness that is often achieved through raw egg and cheese. This recipe we skip those ingredients (however, you are welcome to add them back in) and head straight to avocado for the characteristic creamy texture.

The lemon juice and garlic provide enough flavor for the tang you are searching for. Adding an anchovy is completely optional. I usually don't have them around and the recipe works great without them, however they are a great source of omega-3 fatty acids.
