A nacho and a quesadilla walked into a bar and then they made babies, and out of the oven came this incredible low-carb baked quesadilla dish. This was a match made in PCOS heaven.

The key to this recipe is veggies, cheese and a protein. We created this recipe using ground beef, but you could use shredded pork, beef, rotisserie chicken, left over turkey or even taco seasoned ground meat.
