Marinara One Pan Pasta - Aldi's Budget Grocery Version

We include some sort of pasta dish almost weekly. You know that game where you ask someone, if you could eat one style of cuisine for the rest of your life and couldn't have anything else, what would you choose? It's hard for me not to think I'd say Italian.

Ingredients

  • 1 bell pepper
  • 1 red onion
  • 1 12 oz jar of artichoke hearts (drained and rinsed)
  • 1 Tbsp olive oil
  • 19 oz Italian sausage
  • Chickpea penne pasta
  • 2 cups chicken or beef bone broth
  • 1 jar marinara sauce
  • 3 large handfuls of spinach
  • Optional: 2-3 tbsp Italian cheese (mozzarella, Parmesan, Asiago, etc.)



Instructions

  1. Drain and rinse the artichoke hearts. Dice onion and articohke hearts into small diced pieces.  Then chop 1 bell pepper into bite-sized pieces.
  2. Cut the casing and remove the sausage links. In a pan over medium heat warm olive oil and then add Italian sausage breaking apart the links into bite size pieces and browning.
  3. Once the sausage is browned, add the chopped red onion and cook for 3-4 minutes. Add the chopped bell pepper and artichoke hearts, cooking until tender.
  4. Pour chickpea penne over the meat and veggie mixture. Add 2 cups of chicken or beef bone broth (ensure it's bone broth for additional protein).
  5. Pour the entire jar of marinara sauce over the pasta.
  6. Push all the noodles underneath the liquid line. If needed, add enough water to ensure noodles are completely covered by liquid.
  7. Cover the pan and let it simmer for about 9 minutes (or until the noodles seem al dente).
  8. Uncover and add 3 large handfuls of spinach. Use a large spoon to mix in the spinach. 
  9. Sprinkle 2-3 tablespoons of any Italian cheese (mozzarella, Parmesan, Asiago, etc.) over the top.
  10. Cover and let cook an additional 1-2 minutes to allow cheese to melt and then serve.

Additional Notes

Variations: You can use any shape of chickpea pasta that you would like. Penne is a nice pasta for casserole type dishes. It also is a great conveyer of sauce, and since this this sauce is amazing, you want that in a noodle. Trust me.
