When I was in middle school we moved to the Pacific Northwest where there was a such a rich scene of Asian cultures and their FOOD! I fell in love with Thai food. At first Pad Thai was my gateway drug of sorts to the magical world of Thai flavors, but soon curries, and vegetable dishes, spring rolls and so much more I found such delight in.  I'm so glad you are going to try the hormone glow up version of Pad Thai.

PCOS Pad Thai

Pad Thai is the macaroni and cheese of thai food. Even if it's a new recipe to you, it will become comfort food. Honestly, comfort food doesn't need to be bland or heavy. I made this recipe for my family last week and all the adults were like "this is better than the Thai food we get at the restaurant". Then my mom said "and so much lighter". Yet, it has SO MUCH MORE protein. Let's dig in!
