I grew up in Seattle with great Thai food and this was one of my favorites, served cool and over a bed of lettuce, just yum. I have played with this recipe and wrapped it in purple cabbage. I am ready to let you in on one of my best kept summer secrets.

and pleasing to the eye. The ground meat provides enough protein to keep you full and blunt any blood sugar spike.

If you can brown meat and chop veggies, you can make this salad. It is really simple. Submerging the onions in rice vinegar has a quick pickling effect and is not a step to skip, in fact you can do it a few hours early and put in your fridge.
