Greek Chicken Flat Bread - Aldi's Budget Grocery Version

Who needs pizza, when you can get this veggie-loaded flat bread and beat the summer heat with this light and refreshing meal.

Ingredients

  • 2 Pounds Boneless Skinless Chicken Thighs from Previous Nights Preparation
  • Flat Bread (4 servings)
  • Spinach Artichoke Tzatziki (Aldi’s) or any Tzatziki
  • 1 large cucumber, sliced
  • 1 bell pepper, chopped into bite-sized pieces
  • 1/4 red onion, cut into long thin slices
  • 20 small cherry tomatoes, cut in half
  • Feta cheese, crumbled
  • 2-3 cups of spinach
  • Dash of dried oregano
  • Green olives (optional)



NOTE: This recipe is written utilizing chicken cooked the night before in the Asian Noodle Salad recipe. If you are creating this recipe first follow these instructions for the chicken before moving on to the instructions below. 

Season the chicken thighs with salt and pepper. Place chicken thighs onto a baking sheet with 1 tbsp olive oil to prevent sticking. Transfer to preheated oven and bake for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (74°C). Remove from the oven and let rest for a few minutes. Then, slice the chicken into thin strips. 

Instructions

  1. Prepare Flatbread Base: Lay out the flatbread on a clean surface or serving plates.
  2. Spread Tzatziki: Evenly spread a layer of spinach artichoke tzatziki over each flatbread.
  3. Add Vegetables: Arrange the sliced cucumber, chopped bell pepper, tomatoes and sliced red onion and spinach evenly over the flatbread.
  4. Evenly distribute the chopped chicken thighs over the flatbread.
  5. Sprinkle crumbled feta cheese over the flatbread.
  6. Add a dash of dried oregano for flavor.
  7. Optionally, add green olives.
  8. Serve: Cut the flatbread into slices if desired and serve immediately.

This is almost like eating a Mediterranean salad on top of pizza. I find, you may want a fork and knife to avoid a major mess.
