Zucchini Noodles w/ High Protein Bolognese Sauce

A meal that never disappoints is that spaghetti dinner. Richness from the tomato sauce and simple spices that make for a really pleasing meal. I ate a lot of spaghetti growing up, but rarely was it ever served with anything but marinara sauce or salad. Hardly a protein on the plate, other than parmesan.

Well, this pasta sauce basically means protein is being served too. A traditional bolognese is a meat sauce. This high protein tomato based bologonese sauce will not disappoint on the Italian flavors or the blood sugar balance.

Zucchini Noodles w/ High Protein Bolognese Sauce

Ground Beef Bolognese is one of those sauces that just tastes like “love” in the kitchen. It also happens to be very high in protein, vitamin C and other antioxidants from the cooked down tomatoes. It’s simple to make and is a crowd-pleaser. If you are missing spaghetti trying to eat higher protein, ditch that marinara sauce and upgrade it to a meat sauce like Bolognese.

Layering this protein rich meat sauce over vegetables is a great way to add extra fiber without compromising taste. You can also opt to cook bean based noodles and layer some spinach underneath the noodles and allow the heat to wilt the spinach.
